A little more than a PINCH of salt: an essential addition, I think, in a good SHORT pastry crust. You might leave it out, but the flavor will suffer. It takes more, however, than a little salt to get the right balance of ingredients plus technique to succeed with a flaky result. It’s definitely a struggle for me. And while my crusts are not MUSHY, they are sometimes a bit soggy. And I have even had leaden, heavy results – oh the horrors of that experience!
